Liberty’s Biscuits Food Truck
Liberty’s Biscuits food truck centers around, you guessed it, the biscuit. But these aren't your grandma’s biscuits – owner Rachel Millard uses her biscuits as vessels for delicious fillings such as fried chicken, sausage gravy, eggs, bacon and even Nutella.
When it comes to comfort food my philosophy is to go big, or go home, so I tried The Liberty which comes with fried chicken, bacon, egg, cheese and gravy.
My fellow dining companions went a little less gluttonous with their orders trying the Porky and the Hey Jack.
If you’re a biscuit purist you can always just order a biscuit with butter with your choice of butter or jam.

Jamburrittos Cajun Grille Express Food Truck
Jamburritos Cajun Grille Express chef, Michael Brown, took the Cajun food that he knew and loved and put a tortilla on it – making it Cajun food Phoenix style.
This popular Phoenix food truck brings New Orleans style food and turns it into a portable burrito, hence the Jamburritos name (get it, the popular Cajun jambalaya + burrito = jamburrito).
The Jamburritos Cajun Grille Express menu includes items like the Chicken Jamburrito made with chicken etouffee, jambalaya rice with smoked andouille sausage, Creole sauce, shredded Monterey jack cheese and shredded lettuce, a Catfish Jamburrito made with catfish, jambalaya rice with smoked andouille sausage, Cajun tartar, black bean salsa, shredded Monterey jack cheese and shredded lettuce, hungry yet? Make sure to keep an eye out for special menu items like crawfish etouffee, fried oysters and hushpuppies.

The Maine Lobster Lady Food Truck
Who knew you could get fresh, authentic and delicious Maine lobster rolls right here in the desert?! The Maine Lobster Lady food truck brings gourmet lobster rolls to Phoenix seasonally from early winter to late spring.
The Maine Lobster Lady owner Diane Santospago spends her summers in, you guessed it, Maine, then brings back the delicious “ultimate white meat” to Phoenix.
I caught The Maine Lobster Lady at the Phoenix Public Market before she headed back to the East Coast last summer. I ordered the Maine Lobster Roll, Traditional Style with a blueberry lemonade. Hello, lover. This is what we desert dwellers have been missing. Succulent and delicious lobster. I could almost feel the ocean breeze and smell the salty air. I’ll be trolling Phoenix all winter long to get my lobster fix from The Maine Lobster Lady.

The Uprooted Kitchen Food Truck
While many of the food trucks in Phoenix have some sort of vegetarian option on their menus, food trucks dedicated solely to vegetarians (and vegans) are few and far between. Enter, The Uprooted Kitchen. The truck is run by Chad and Erin Romanoff who wanted to bring healthy food options to their community.
The Uprooted Kitchen's menu changes weekly, however they always have two salad choices, a quesadilla and an un-bun veggie burger. All of The Uprooted Kitchen’s dishes are freshly prepared with local ingredients. I recently tried Uprooted Kitchen at Food Truck Friday and was immediately addicted. I promptly visited them the very next week to get my fix.

The Uprooted Kitchen menu changes weekly, but they always have two salad options, an un-bun veggie burger and a cheese crisp.
The first salad bowl I tried was the soba noodle tofu bowl which came with kale, red cabbage, sesame soba noodles, marinated tofu, carrots, pickled cucumbers, corn, snap peas, and mushrooms served with a spicy lime peanut dressing and a house-made gluten free seeded cracker.
This noodle bowl was hearty and kept me full for the rest of the work day. You could tell how fresh everything in the bowl was, and as you can see by the photo below I finished every single last bit. Yum.
Now, I was hooked. I went back to Food Truck Friday the next week to visit the Uprooted Kitchen food truck and this time I tried the quinoa kale salad bowl made with tofu, beets, mushrooms, snap peas, avocado, purslane and sunflower seeds with a sesame soy dressing and their signature house-made gluten free seeded cracker. Another win. I look forward to going back and trying one of the un-bun veggie burgers and quesadillas.

Short Leash Hot Dogs Food Truck
Probably one of the most well-known food trucks in Phoenix, Short Leash Hot Dogs slings gourmet hot dogs named after real-life dogs, topped with fresh, and sometimes unexpected, ingredients all wrapped up in naan bread. Owned by husband and wife team, Brad and Kat Moore, Short Leash Dogs has also been featured on many “best of” lists and on national television shows like the Cooking Network’s Eat Street.
Our personal favorite Short Leash specialty is the Aiko, with a spicy beer hot topped with mango chutney, diced jalapenos, red onion, fresh cilantro and mayo. We’re also a fan of their rotating specials and corn pups.
Short Leash Hot Dogs is one of the first (and we're sure not to be the last) food trucks to have a semi-permanent location with their Sit, Stay setup. The concept serves an expanded menu and is open on Friday nights 6-8pm behind Medlock Plaza, near Central Avenue and Camelback Road.

Luncha Libre Food Truck
Luncha Libre is one of the newer local food trucks on the scene and specializes in Arizona inspired food, using local ingredients. After following them on Facebook and Twitter, I was really looking forward to trying their food. Their posts on social media taunted me:
"Here is the Special we are running all day today: ground beef, pork chorizo, pico de gallo, chile con queso, and jalapenos. Served on a locally made talera and served with "truckmade" chips and salsa."
"NEW MENU ITEM : Alejandro "The Great" Quesadilla- Gyro, pico de gallo, feta, mozzarella, Monterey Jack, kalamata olives served with "truckmade" chips and spicy tzatziki."
"We will have 3 NEW MENU ITEMS: Chilled Gazpacho with chilled citrus shrimp, Black bean hummus wrap with marinated vegetables and cotija cheese, and Oven Roasted Turkey breast, bacon, guacamole, lettuce, tomato, and cranberry mayo served in a local "fresh" talera."
I had to try food from this Luncha Libre.
Finally, I made it. I ordered the Papa Verde quesadilla, made with potatoes, green chiles and jack cheese. The quesadillas from Luncha Libre are huge, when I got my order I thought there was no way I could finish it, but I did. It was filling, but I was not uncomfortably full. You could tell that the ingredients were all very fresh. I also had to restrain myself from licking the last bit of salsa from the cup that they provided. I'll be back again, Luncha Libre.
